Following on from my weaning post I’m wanting to start posting some recipes. I don’t know how much anyone is interested but hey let’s give it a try!
So my first one is just a super easy pasta sauce recipe which is really quick and versatile for the whole family. Jack absolutely loves this sauce so I know it’s a good go to if I’m struggling for ideas. You can also batch cook and freeze which is a winner winner.
This recipe made enough for Jack, Michael and myself with leftovers. (I added some more flavour into ours once I had portioned Jacks up).
Method:
Gently fry 1 small onion, 1 clove of finely chopped garlic, 2 carrots finely grated and a red pepper until soft. Add in some rosemary and oregano and continue to cook for a few minutes.
Add in 2 tins of chopped tomatoes, rinse out one half tin with water and pour that in, add a squirt of tomato purée and simmer for 15 to 20 mins.
I leave it to cool and voila done! You can leave it, or purée it completely depending on what stage your baby is at.
I usually serveup with spaghetti, meatballs and grated cheese on top. Although next time I think I might add in some soft cheese and stir through for a change.
You could also add in some mince, or more veg at the start. Whatever your preference.
